I am making a fondant decorated cake this weekend which will have a cream cheese based cookies and cream filling. The cake will be completed on Sat for a party on Sunday. I am concerned about spoilage and want to know if this type of cake needs to be refrigerated over night. The cake will be dropped off at the party site Sunday morning. If refrigeration is necessary, what is the best way to store the cake so the fondant and decorations are protected?

I appreciate any and all advice!

Jackie

I refrigerate all my cakes prior to delivery and tell the person to pull the cake out about 3 hours before their event so the chill will go away. Wedding cakes sit at reception halls HOURS before their cut. I keep fondant covered cakes in my frig all the time at home. I find MMF sweats/shines up. I quit using MMF because of that and only use Satin Ice. I don't have that problem anymore.
