I want to try my hand at modeling figures for cakes. I have a lot of experience modeling for crafts using FIMO and Sculpey, and I'd love to add similar figures to cakes... But I have no idea what medium is best for modeling. I've used gum paste for a few things in the past (like seashells), and it seems like it dries out very quickly. Fondant feels a lot more like clay, but it doesn't seem like it would firm up enough for a standing figure.

Gum paste does dry out pretty quickly but if you keep your hands and fingers well greased with white vegetable fat you should not have any problems. Fondant will not hold up and you do need to use Tylose powder to turn the fondant into gum paste.
