OK so I'm doing a fondant over a Red Velvet Cake/Cream Cheese Filling which is the little girls request.

What would you suggested used on the outside of the cake prior to laying down the fondant. I don't want to take away from the taste of the cake/cream cheese filling.

Are you asking how to get the fondant to stick? If your cream cheese frosting has crusted, just mist it with a little (very little!) water and the fondant will stick fine. If the cream cheese frosting hasn't crusted, or isn't the crusting kind, just put the fondant directly on the fresh frosting and it will stick to that. If you refrigerate your frosted cake before putting on the fondant, then again, misting it with water is the way to go.
