Wedding Cake W/ Cream Cheese Bc - How Long Can It Sit Out?

Hi,

I am using cream cheese buttercream as filling in a wedding cake. How long can the cake sit out? I an delivering it at 3:30 and assume it will be cut at midnight. Note: the cake will be iced in smbc and then fondant.

Here is the cream cheese recipe I'm using:
1 cup butter, softened
3 oz cream cheese
4 1/2 cups icing sugar
1 1/2 tsp vanilla extract

Don't worry about it. Sugar acts as a preservative. I use more cream cheese in my regular buttercream! Plus it will be encased in fondant until cut.

Because I am going through this right now I am going to mention this.
This would be a good question to ask your dept of health representative. They may have either guidelines, or "laws" that say how long you can let it set out before they deem it is unhealthy.

I know they have guidelines for everything served, so something like this would definitely be something they could help with.

And if you are not "legal", I would still call them. Even if you are making this for a friend or yourself it might be a good thing to know. I know I intend on asking this question of my DOH guy.
