Baking On Tuesday-Serving Cake On Saturday (Is That Too Long

My son's first birthday is fast approaching.

The birthday party is on a Saturday with his actual birthday being the Wednesday of that week.

I was thinking to bake the cakes on Tuesday and then decorate on Thursday/Friday.

Is that too long to leave the cakes at room temperature (if I bake that early should I freeze the cakes)?

We only have a fridge freezer-so freezing will be tough but I will see what I can do.

Your input is appreciated.

I think cake tastes best on day 4 or 5... it'll be fine at room temp.

I'd suggest getting the icing on as soon as possible so the flavors have a chance to blend and it won't dry out. Perhaps you can ice on Tuesday after the cakes have cooled, or ice on Wednesday.
