Applying Fondant To Sides

I've been asked to create a few 3D cakes that don't allow fondant to be stretched over the top and then evently smoothed out all around (i.e. a T-Rex dinosaur). For these kinds of odd-shaped cakes I need to apply the fondantin 2-3 different sections.

Any tips on how to do this? The underside of the neck of the T-Rex was particularly challenging-- fighting the gravity so the fondant would stick and not just slide down or slap off the cake.

Also, how on earth do you blend or cover the seams created when you piece 2 areas of fondant together? I can't seem to 'pinch' them together without the seam just deepening, and I can't exactly cover them with a decoration when it's a dinosaur! (btw, I use MM fondant exclusively-- should I add a little tylos to stiffen it up a little before try doing vertical applications so it's a little easier to work with?)

Any tips, tricks or stories of experience much appreciated!
