I'm trying to dry hibiscus gumpaste petals but not sure I'm doing it correctly. I already have the wires in each petal and can't fit them on a cel former because of the wire. Anyone have any suggestions?

You could try drying them resting in plastic spoons.

I agree. I have a pegboard that I've glued plastic chowder spoons to (after cutting off the stems). And I nestle each petal in the cup of the spoon.
