I've received a cake order for a Sunday birthday party, but I'm going out-of-town on the Friday before the party. If I complete the cake on Friday morning, will it still be ok by Sunday? It will be frosted with ganache and covered with fondant.

i'm doing this exact same thing for this weekend. and i've done it several times before and the cake is still always great. its not ideal... but as the schedule sometimes makes it necessary for me...its happened and its still been fine!

I have done this a few times too, it will be great. I read on a thread in here that the cake tastes better after a few days and I have to agree.
