I want to make a cake with a strawberry filling and I need to freeze it. How will the strawberries hold up and will the cake become wet from the strawberries thawing out between the layer.

I am using Strawberries n' Cream Mousse as my filling with fresh strawberries

In a word; yes. Strawberries become soft and mushy after being frozen. Could you use a commercially made strawberry filling instead?

I agree I think the strawberries would become very soft and make an liquidy mess! The cake supply store I go to has a strawberry filling in a sleeve and its not too bad. I would just try a couple different ones. I believe I have read posts that some store bought fillings are pretty bad.
