I recently inherited an older model Blodgett convection oven that only has one blower speed and that is high. I made test cakes that turned out so so and then decided to go for it and loaded up the oven with cakes and they look different and seem to have a different texture - heavy and not fluffy like my usual conventional oven cakes. Is it possible to use this oven or should I disinherit it??? HELP PLEASE!
