Can anyone recommend a chocolate ganache filling or chocolate fudge-type recipe that will hold up well in a carved 3D cake?
Ganache itself does!! I use it all the time. Just make ganache as usual, cool, whip it, and spread.
so just use the 2:1 (semi-sweet) or 3:1 (white or mile choc) ratio as if covering the cake? Then whip in the kitchen aide? For how long? I cover with ganache so this should be pretty simple! THANK YOU!!
