I can't believe I just did this.....what was I thinking? I made a ganache with UNSWEETENED chocolate. And, of course, it tastes horrible, even though I did add 1 oz. sugar. Is it doomed, or can I sweeten it somehow?

Two suggestions: Add melted chocolate to the mixture with enough heavy cream to give you the right consistency. You may end up with twice the amount you need but it freezes well. Or try adding confectioners' sugar and more heavy cream. This second option will give you a delicious icing but it won't be ganache... I know how you feel - I hate when I make mistakes.
