I am delivering a wedding cake out of town this weekend - there is a three tier display cake and a kitchen cake. The display cake is covered in fondant - each tier is two layers of cake with a SMBC filling between layers. The kitchen cake will be identical in height, with two layers of cake and SMBC filling between the two layers. Since the display cake is also covered in fondant, is this something I need to do to the kitchen cake as well?

Thank you!

thank you. this helps. i will probably cover it in fondant also then, though i'm a little nervous about getting my fondant rolled out large enough.
