What are the best fillings that do not have to be refrigerated? I am especially looking for a chocolate, a coconut, and a banana one.

There's a recipe on the back of the Hershey's Cocoa Powder box for icing that I use for a fudge filling. It doesn't have to be refrigerated and tastes great!

For chocolate, use a basic buttercream recipe but add cocoa and extra water or coffee to get the right consistency. For coconut, add coconut to a vanilla buttercream. For "fruit" fillings, add any flavor of fruit jam to vanilla buttercream. For banana, maybe add a few drops of banana extract. The theme: start with a basic shelf stable buttercream.

For coconut or banana, I just use regular bc with extracts, Plus toasted coconut for the coconut filling.

Thanks. I just didn't know where to start. I see a lot of recipes for pudding/custard type fillings or ganache and I didn't know how well they would do un-refrigerated.
