Just wanted to introduce myself. I found your forum when looking for info on the inspection requirements for the state of Virginia. I have a degree in Accounting and I am an Enrolled Agent (Tax Accountant) and have run a small bookkeeping and tax company since the birth of my son four years ago. Recently, my husband and I were talking about starting another business...and he has ALWAYS brought up opening some type of gluten free bakery and/or restaurant. I have spent the better part of two weeks (YES EVEN DURING MY CRAZY TIME OF THE YEAR!!) testing recipes out and changing things around so they will turn out good for gluten free. Luckily for me, I have over seven years cooking and baking gluten free, and I want to create a good product for other gluten free people, as well as those who are fortunate to not have celiac disease or gluten intolerance.
I have spent many hours since finding this forum reading your threads! I see a lot of you make good points about knowing business and numbers and keeping up with your accounting...BRAVO!!
I look forward to "getting to know you" more as my research continues. Of course, since I am specialized in just gluten free, which could be the death of me, I probably won't create as wonderful things as all of you do!
