a cake sheet 7x11 feeds 28 people... how would you price that.
is it similar to a 10x10 0r a 10' round...

If it's double-layered party size servings, yes, 28 servings.
Double-layer wedding size servings... 32 servings.
Most don't consider sheet cakes as double layer, those are typically called "kitchen cakes". If you're talking about a single layer (2" tall), it serves half of the Wilton chart(s), and you'd charge whatever you're per serving price is.
