Do Gum Paste Flowers Get Old?

I am wondering how far in advance I can make gum paste flowers. I am thinking that it doesn't matter. Do they ever get gross?

Gross how?

I wouldn't close them up in an air tight container, but when you store them I would put them in something, like a cardboard cake box, to protect them from getting dusty. Also florescent lights and sunlight could fade colors (when you color the gumpaste before you make the flowers.)

I have gumpaste flowers that are over 3 years old and they look exactly the same as the day I made them.
