I need tips on keeping buttercream smooth when icing a cake. I have turned to loving fondant because my buttercream doesnt look pretty. icon_cry.gif

I have had good luck with Edna's recipe, and it smoothes nicely.

I've also used Indy Debi's and Sugarshack's with equally good results.
It comes down to a matter of taste preference and a couple of different ingredients, but they are all great, crusting buttercreams that smooth easily using the Viva paper towel method.

I use Indy's buttercream and love it, not too too sweet and crust's nicely...I do find if I over whip it I get air bubbles...

Do you leave it at room temperature??
Another thing with me over beating my BC (shortning) gives me air bubbles so try mixing the shorting just enough to make it smooth

Yes I leave my at room temp, thanks for the tip! I have a batch to make tomorrow so I'll make sure to pay attention while I'm whipping icon_smile.gif
