Hello! I am decorating a cake on Thursday for my friend's party on Saturday. It will be filled with Edna de la Cruz's buttercream and covered in MMF. Does the cake need to be refrigerated? I am nervous because of the butter content, but if it is not necessary, I would prefer for it to be stored on the counter because of the MMF. TIA!

your cake will be fine out of the fridge. Just cover it really good, to prevent it from drying out.

Butter is a non-issue. It really doesn't require refigeration and in years past, was just left out on the counter.

If it's Edna's basic buttercream recipe with high ratio shortening & PS, the fats & sugars act as a preservative and it doesn't require refrigeration.
