Stable Cream Cheese Icing? That Doesn't Need Refrigerated?

Can anyone tell me if there is such a thing as a cream cheese icing that doesn't need to be refrigereated.

I am making a fondant cake and have been asked for a cream cheese icing. So I said yes - stupidly - and then realised I won't be able to refriegerate it once its ready and the cake has to be delivered the night before (we're going to disney on ice the day of the party) I don't want to put my piece of art in the fridge where it might get condensation spots so I need a stable cream cheese filling. i don't want to use a can cos I hate the aftertaste of those but I read somewhere that if you add shortnening to your cream cheese, then you don't have to refrigerate. is this true? Has anyone tried it? I would hate to make this cake and when they cut into it it is rotten icon_sad.gif

OR should I give up and just put the cake in the fridge and ask them to take it out in the morning so it can defrost?
