Hi all, I am very new to cake decorating, so sorry if this is a dumb question....I am making a cake for next Sunday and want to finish it on Friday or Saturday. I want to fill the cake with a cream cheese filling, cover it in fondant, and leave it out overnight. Can the cake stay out of the fridge, given that it has cream cheese inside? my understanding is that fondant does not hold up well if refrigerated? Any advice would be greatly appreciated...

Generally cream cheese icings do need to be refrigerated, especially overnight I wouldn't chance it.

Some fondants are fine to be refrigerated (not sure what brand you're using). If you do refrigerate it, let it come to room temp and do not touch it at all until then.

There are some mock-cream cheese icing recipes out there that don't require refrigeration, if that is something you would consider.
