I was making a cake on Friday or a Saturday delivery. The cake is covered in fondant. Just found out the child is sick and the party has been postponed to next weekend. Can I freeze the cake with fondant on it? Do I need to if it's refrigerated?

The cake would be fine to freeze covered in fondant, as long as it hasn't been previously frozen.. Not a good idea to freeze, unthaw, refreeze, etc. In a bind I'd rather give a client a previously frozen cake than a possibly dried out or old cake!
