I have an order to do a 12" square baptism cake on 3rd March. From previous disaters baking large cakes in the oven, (buy the time the middle finally gets cooked, the edges and corners get hard and crusty) I have given up doing a large cake to ease me the stress of worrying if its going to turn out probably. I have decided to bake four 6" square vanilla cakes. I have just tried out a receipe (hummingbirds vanilla cupcake receipe for 12 cupcakes) but it didn't rise much (I should have doubled the quantity maybe). The corners and sides were also chewy so I don't think I'll be using this receipe. Does anyone have a good recipe for a vanilla cake for a 6 " cake?

A friend put me onto 'Sky High Cakes' vanilla buttermilk cake, and I've never looked back! do a search on this page for 'vanilla buttermilk', this is the recipe I swear by:
