I have a possible order for a Hilary Duff style cake (naked cake basically). Does anyone have any experience with this, especially keeping it fresh?

In the photo the cake looks dry, not brushed with any sort of sealant or anything. I would like to know how I could keep this cake fresh. Also I would have to drop this cake off the day before due to a timing issue (I'm working with a venue for wedding cakes).
