Fondant Or Gum Paste

I am going to be making some penguins for a cake. I have not decided if I will do them in gum paste or fondant. They do not have to be eaten. My question how far in advance can I make them? If I use fondant? Gum paste? I can get black fondant easily I wasnt sure if I could make the gum paste black enough without making it to wet.

Use the black fondant but put some cmc or gum trag in it to make it modelling paste thumbs_up.gif

You can use either or - I made fondant penguins (See pic) a week in advance - and were still soft enough to eat icon_smile.gif
I also used black food coloring (a lot) and they turned out fine!
