hi, i am trying to figure out serving sizes for a topsy turvy wedding cake.
does anyone have a chart out their to do this?

Not sure what method you use for topsy turvy but i use the 3-2" tall cakes and then carve. So at the highest point it's 6" tall and the lowest 4". I charge 50% more per serving to account for the extra layer and my time to shape the cake.

I figure my servings based on the middle layer diameter and a 4" tall cake.

So if one tier was a 5-6-7 diameter layers i would figure the servings on a 6" round 4" tall cake. Then take it times my higher price per serving.

Ya, that's what I do pretty much also. And then I hope that the caterer doesn't butcher it.
