Cream Cheese Filling/frosting Help

Okay, so I have a recipe for cream cheese frosting/filling that I love and the cake I have for saturday wants cream cheese filling. Its a fondant covered cake and I work a 9-6 job M-F so time is at a premium for me. I haven't done a cake that is quite this a lot to do for me and I want to be able to spend enough time on saturday making sure that it looks great. (not to mention I have ANOTHER even bigger cake that I have to do for Monday--I have no idea what I was thinking)

My question is...the cakes are already made and frozen so I can work with them. Do you think that stacking and filling the cake today (thursday) would be too early? Of course I would ice the cake and not actually cover it and then refrigerate it due to the cream cheese and do the fondant work on saturday. I'm concerned that the cream cheese frosting might be too hard as a filling by then? IDK, maybe I'm over thinking this part. HELP!

You should be fine doing it today, that is, if you haven't done it already.
