Cake Batter Question

can you make the batter for a cake the night before and keep it in the frig and bake the next day?

I've never done it, but have made pancake and waffle batter the day before and kept it overnight. The consistency changes, it's not good. Maybe someone else here has more info. Why would you want to make it ahead, anyways? Making the cake batter is the quickest part of this.

I have, although sometimes it doesn't rise as high.

I just did it this weekend, I made cupcakes and had a lot of extra batter so I put in the fridge. The next day I had to make 4 extra cupcakes last minute, and they came out great, no difference at all.

I was just reading on another thread that you need to bring batter to room temp. before baking, that's probably been my problem, sometimes I do and sometimes I don't. I love this site I learn something new all the time.
