I keep finding conflicting advice about how to store MMF.

Does it go in the fridge or is it fine (wrapped tightly) on the counter?

I need to make a bunch of different colors for a cake I'm building Friday night. I'm going to use this recipe:

It doesn't appear to me that anything in the recipe requires refridgeration. If I make the fondant today and wrap it well will it be fine for Friday? I know it needs to rest at least overnight.

Hi Kristy,

You don't have to store it in the fridge. I keep mine wrapped up in saran wrap inside a zip lock bag and then inside an airtight container. Keeps well for 3 months (I've noticed it starts breaking down after that). You can keep it in the fridge and even in the freezer for months - just let it come back down to room temp before using it.

Thanks--it seemed like that should be the case but I've seen a lot of recipes for MMF that said keep in the fridge.
