I am in the market for a professional convection oven. I would like to know which you feel is better and why? I'm not necessarily interested in installation costs and so forth, but in the quality of baking in each one.
Electric or Gas?

For cakes, gas. It's a moister heat.
For cookies, electric. They benefit from a drier heat.
