I have to do a cake tasting on Monday and the bride cannot have gluten or corn. The groom's only request is that the cake is custard filled. They want to have a black forest inspired cake (chocolate & cherry).

custard...no corn starch

cake...no gluten

help!!

Are you talking about custard or pastry cream? I normally do not make custard with cornstarch, it's usually either cooked on the stove or baked.

I guess when she said "custard" my head just jumped to pastry cream. Do you have a recipe recommendation for chocolate custard?

My next question is going to be - how do I make a large custard filled cake without it oozing all over?

I use Swiss meringue buttercream. If I just do a damn around the edge will that really keep it all in?

I've made several gluten free cakes, carrot cake and white cake, no chocolate yet. My boss can not have gluten so I try to include her when making treats!! I am sure you can find a gluten free recipe on CC or Google it. I always use Bob Redmill's products when going gluten free! It will taste different but she is probably used to that.

Things to know: gluten free and corn free

1. you cannot use Betty Crocker GF cake mixes: they contain xanthan gum which is grown on a corn medium

2. you can make confectioner's custard [filling] from stratch using potato starch. Packaged custard powders are either wheat- or corn-starch based ..

3. a basic 3 cups Gluten free flour mix is
# 2 cups rice flour
# 2/3 cup potato starch (NOT potato flour)
# 1/3 cup tapioca flour

4. use guar gum in the place of xanthan gum
