I need evaporated milk for a recipe but am stuck at home snowed in!! I have buttermilk and double cream, can I use either of these? I have read that you can evaporate your own milk but not sure about quantities I need 5 tablespoons for my recipe so how much should I put in the pan to evaporate? They say evaporated milk has 60% of the water evaporated out of it. Any ideas welcome, thanks guys.
