Help!! Will This Affect My Berries Mascapone Cake??

Hi all,

Really need some advise. I'm attempting to make a mixed berries mascapone cake.

While following a recipe, I was supposed to mix grand marnier with water separately (before soaking sponge fingers into this mixture).


I added my thickening cream, sugar, mascapone, and dumped my grand marnier mixture in, and beat, but realised the cream mixture wasn't taking form =(

Any idea how I can save it? After mixing 750g of mascapone into my mixture, I didn't want to throw the mixture away and start afresh, Will my cake be liquidy? I have the mixture layered with sponge fingers and berries and the cream mixture, but I'm now really worried the cake wouldn't hold =(

The recipe said to keep it chilled in the fridge for at least 8 hours... Will it thickened at all by chance?

Any advise would be greatly appreciated.

You could bloom some gelatine and add that to your mixture to get it to firm up. Carefully follow the directions on the unflavored gelatine.
