I'm going to be practicing some shipping on Monday of some small mini cakes. I will probably be overnighting the shipments but I was wondering if it was okay if I covered the cakes in fondant today and then took them out of the freezer to ship on Monday. I just won't have a lot of time tomorrow and Monday to do this so I would rather get it done today. The cakes will be the mini Christmas Ornaments and Mini Christmas presents. Has anyone froze fondant cakes without a problem?? Thanks!!

Yes, if you wrap the cake in plastic wrap and then wrap the box they're in in plastic wrap they'll be fine. Don't unwrap them until they're completely thawed out - the plastic wrap keeps the fondant from condensating, so it's important not to unwrap before they're at room temperature.
