I am making my first wedding cake this weekend. It will be a 12, 10, pillars and a 1-layer 6" on a 1 layer 8". I have baked the 10's, the 8 and the 6 . I did one of the 12 but when I took the flower nails out, the cake started to split so I have to start over tongiht. I am not nervous about the deocrating and not so much on the transporting and the assembling, I am scared to death to ice it.... please all keep my cake in your cake prayers..Thanks

Before you flip out your cake, make sure it sits for at least 7-10 minutes out of the oven. When it comes out of the oven, take a clean unpatterned tea towel and press lightly down on any dome that has formed to level out the top of the cake a bit. This will help with the cracking problem when you take the nail out. Also, after flipping your cake, wait a bit for the heat to disperse before removing the nail.

I just did a 12x12 square and I cooked it on 325 for 2 hrs with 2 nails. Cooled for for 30 minutes in pan, perfection!
God has a plan! Don't throw away your cracked cake, freeze it in a zip lock! You may need some cake balls down the road!
