Are you mixing by hand (ie with hand held beater) or in stand mixer (ie kenwood)? When i would make a cake (madeira) by hand, from start to getting the cake in the oven would take me an hour. Using my kenwood mixer it now takes me 30 minutes. I would imagine if you're doing it this quickly you're probably not creaming your butter and sugar for long enough at the start - i usually beat on high speed for about 10 minutes (scraping the sides a couple of times) - you want the creamed mixture to have the consistency of mayo, light and fluffy and very pale, and minimal sugar granules - this is definitely the key to a good sponge. HTH.
