Just made cupcakes that taste just like a Pecan Log from Stuckey's! Made hubby take them to work to get them out of the house! I made a vanilla cake (with vanilla paste instead of extract), caramel buttercream using dulce de leche and topped with pecans toasted on the stovetop in butter and sea salt. Almost piped dulce de leche into the cupcake for a filling but tasted one and it was too sweet.

Ohhhhh LaurenLuLu, those sound delicious!!! Those pecan logs always bring back memories of traveling as a child. icon_smile.gif I might just have to give these a try!

I don't really use recipes but for the buttercream I use equal parts butter and shortening, a little salt, powdered sugar to the right consistency and then after it has mixed I added Dulce de Leche. I used the kind in the squeeze bottle because I found it for 50 cents but it is also sold in cans like sweetened condensed milk. Vanilla paste is amazing though in the cake, more vanilla flavor than extract because of the seeds.
