Would it be ok to use 6,8 10, and 12-inch square pans for a wedding cake or is that not enough difference? They are probably going to be fondant covered with a ribbon wrapping each tier. If that will not work, what sizes can I use to get approx. 175 servings, including or not including the top 6" tier?

It would work to serve 172 including the top tier.
