I live in Guam and I have been using the MMF for my cakes. The humidity and heat does a number on it. It will be fine in my house, and one I take it outside/in my car to the location, it gets sweaty, sticky/tacky and bubbles. Does anybody have a better recipe formula that will stand up better in the heat? Thanks for any help!

Hi,

I live in San Diego but will be out in Guam next month for a wedding. I've been asked to make the wedding cake. I work only with fondant covered cakes and was wondering if you've had any luck with recipes for fondant covered cakes? Also, do you think buttercream with hi-ratio shortening will work along with some fondant decor? Have you tried working with gumpaste flowers? do they hold up in the humidity?

Thanks for any help you can provide!!
