Using Roses On A Cake . . .

Hi Everyone!

We are doing our first wedding cake next week . . . aaah!!! The bride wants red roses on it. A couple of questions . . .

1. Do you make sure you buy your roses from someplace that says they are pesticide free? Our grocery store has beautiful roses but do I need to worry they have been sprayed with something???
2. How long will they stay fresh out of water? We purchased the old fashioned Wilton flower spikes but they will leave such a hole and I am concerned about the water splashing onto the cake . . . so I would prefer to just cut them at the bud and buttercream them to the cake. If we place them at 2pm should be feel confident they will still be looking good by 9pm? Has anyone used the flower spikes with success?
