So apparently these little pie pops are the newest trend. I am having a hard time with them. When I make them, the crust to filling ratio is way off. Because these are only about 1 1/2 inches in diameter, by the time you close them, there isn't much room for filling. I just don't like the idea of taking a 4 or 5 bites of crust and getting 1 or 2 bites of filling.

My first attempt, a lot of the filling baked away, so I brushed the insides of the pie crust with a simple syrup and that really helped keep the filling from baking away. I am also rolling the top piece larger to tent over the filling pile. This allows for more filling, but I'm still not happy with the result.
Does anyone have experience with these or any other suggestions?
