Does anyone has any experience with water ganache?
How is it different from the usual ganache?
Is it ok to cover it with fondant?

I never heard of it before, but googled it and found lots of good information. Based on what I found it tastes really good, but the downside is it has a reduced shelf life (maybe max. 5 days). No info on using it under ganache though!
