How far in advance can you you roll the fondant on to your cake?
Can I make the night before then put in the fridge? will it still be soft?

yes, you can put on cake in advance and refrigerate. If I see condensation when I take out, I put by a fan and it evaporates and looks perfect. A few things that helps me-
I like to make w PS but roll dusting with CS, seems to make my fondant behave better, MMF.
When I'm done i use a Handi-Wipe brand, lightly damp wipe- to wipe whole surface. The more wet, the shinier the fondant will dry.
I clean detail fondant pieces with vodka, so no spots are left. Hope this make sense.
Check out the tuitorials on satin ice...some great tips!
Have fun ~ blessings
