Hi, i need to do a wedding cake and i have tried one wasc recipe and noticed the top was gooey and hard to cut, when i leveled my cakes. the cake was done though but gooey on the tops. I need some advice. Thanks

I was having gooey tops also, so I just cut back on the sugar and that helped a lot!! Here is how I've modified the original WASC.

Sift together:
1 Box DH Classic White
1 cup AP flour
1/2 cup sugar
1 tsp. baking powder
3/4 tsp. white popcorn salt (in the popcorn aisle)

Add these sifted dry ingredients to your KA mixer bowl in which you have:
4 egg whites
2 TBS. canola oil
1 cup sour cream
1 tsp. pure vanilla
1 tsp. almond emulsion or extract
1 1/3 cup water or milk

Mix on low until blended, turn up to speed #1 and mix for 2 minutes. Pour into prepared pans and bake at 325 degrees!
