Cutting Cookie Stencils With Cricut?

Hi! I'd like to try cutting some cookie stencils with my cricut machine. I see that you can cut out letters and shapes, which is great. But how do you get an "overage" area around the letter or shape so that you can paint/spray/use royal icing?
Also, do you use stencil plastic or just cardstock?
