If I am in a pinch and I need to used a 6" plate for an 8" cake, is that doable? If the center peg fits in the middle it will be secure right? Has anyone had to do this before?

Yes, I've done this before in a pinch and it was fine. I traveled 50+ miles with the cake and it didn't move a bit. You'll be fine!!

I have also done this. I used a 6" plate for a 9" cake and traveled quite a bit to deliver the cake. It was fine!
