I am still not sure what to do on the 80th suprise birthday cake, however what would be a good choice for flavor(s)? I usually doctor using a wasc variation. as far as I know there are around 90 guests.

ETA, dh wants whipped chocolate ganach for filling.

How about orange or some other citrus flavor? They usually go very well with chocolate. I forget exactly how much liquid is in a WASC cake, but you might try substituting it for frozen orange (lemonade, grapefruit) concentrate. I have an orange scratch WASC recipe that turns out really nice. If you want it, just PM me - I'll be happy to send it to you.

How about strawberry cake? Even using liqueur in your simple syrup like Chambord, Framboise or Amaretto would be awesome.

I'm pretty sure she is allergic to anything strawberry.

I know there will be lemon bars on the menu, so I don't know about anything citrus, but that recipie sounds great.
