Hi everyone I just tried to make the wilton fluffy boiled icing its really yummy tastes just like marshmallows! I did notice that some syrup especially the stuff on the sides of the bowl cooled a bit too quickly while being incorporated into the mix forming small candy like balls. This unfortunatly meant that I have a fab icing with some hard sugar syrup lumps here and there...any advice? I tried to do it slowly like the recipe said but perhaps it has to be added quicker or maybe it has to be added sooner than the cooling off time recomended?
