There is a really good bakery in Milford, CT that sells a vanilla cake that is very light and is almost white colored. I am trying desperately to find a recipe like that. Does anyone have a vanilla cake recipe that is not dense or heavy like a regular yellow cake mix? It's not spongy like a sponge cake. It's pulls apart really delicately and is super yummy and light with a nice vanilla taste to it.

I appreciate your knowledge and help!

I've recently discovered a white cake recipe which I really like, but have only made it into cupcakes so far. It is very light in colour and texture. It's on Wren's Cottage website, scroll to bottom of page and click on Karen's Kitchen. HTH

Thank you so much for the site info and for the 2 recipes. I will see if I can get close to that cake. It's so delicious and I want to mix up the fillings and try some cool tastes with it, but I've got to find a recipe for the darn cake. icon_smile.gif
