I have pretty much got all my recipes down pat,that is,except for spongecake!! I've tried four different recipes now and it's either to "oily" to dry or won't cook all the way through in the middle.I've tried turning the temp down a notch to let the middle have time to cook and have even tried my own tweaking to some recipes with no luck.I'm so frustrated as i have a cake to make this week and she of course wants lemon spongecake.I hadn't had that one listed yet on my page because i haven't got my recipe right for it...but i told her i'd do it. I made one tonight....followed the recipe to the letter and it turned out nice and fluffy....but tasted like crap!It had a flour taste to it.So i tried tweaking it and adding another tsp of vanilla and lemon juice and the second time it came out really dry. Please help!Does anyone know what i could be doing wrong?Is there a trick to baking spongecake?Anyone have a recipe i can try?
